and a special drink! Already the old farmers knew that “food
and drink keep body and soul together”!
This fact is well acknowledged throughout the food service industry
of the Val Gardena Valley and reason why high end hotel restaurants
as well as cozy village eateries are so dedicated to present traditional
foods inspired by a national and international cuisine enriched
by many local specialties and crowned by top quality South Tyrolean
wines.
A simple recipe:
Buckwheat pancakes
This delicious and simple recipe originates from the old cookbook
of traditional recipes “Spëisa da zacan”.
Ingredients:
150 g buckwheat flour
2 eggs
¼ l milk
salt and oil
Prepare smooth dough from milk, flour, eggs,
and salt. The dough is then pored into hot oil to the thickness
of a finger, fried till brown, turned, and torn into pieces with
two forks. This procedure is repeated till all the dough is gone.
The sugar coated pancake is served with a preserve, compote, or
apple puree.
